INGREDIENTS

6 oz. Penne pasta par cooked al dente in salted water

¼ cup fennel sausage ground

¼ leek greens (cleaned, diced, blanched, reserve the whites for the Julienne garnish) 

¼ cup Julienne leeks (floured, fried for garnish) 

1 cup heavy cream

½ cup four cheese blend (equal parts fontina, parmesan, gorgonzola, taleggio cheese)    

 

DIRECTIONS

In a medium sauté pan add the sausage and leeks, sauté for about one minute. Add the heavy cream salt, pepper and reduce. Add the pasta and cheese blend. Reduce until thickened and add to a baking dish. Top with shaved parmesan and place under the broiler until golden brown. Top with the fried leeks and fresh basil.
